Caramel cream with salt flower from Guérande’s ice cream
Ingredients:
Sugar 100g
Milk ½ liter
2 egg yolks
Caramel cream with salt flower from Guérande 200g

Mix the egg yolks and the sugar until it becomes white.

Add the milk and put everything in a pan.

Heat it until the cream thickens a little but don’t let it boil.

Mix it a little bit and let it cool, then add the caramel cream and mix it again.

Put the preparation in the freezer.
