Caramel cream with salt flower from Guérande’s ice cream


Ingredients:

Sugar 100g
Milk ½ liter
2 egg yolks
Caramel cream with salt flower from Guérande 200g

  • Mix the egg yolks and the sugar until it becomes white.
  • Add the milk and put everything in a pan.
  • Heat it until the cream thickens a little but don’t let it boil.
  • Mix it a little bit and let it cool, then add the caramel cream and mix it again.
  • Put the preparation in the freezer.
